A friend taught me a great way to poach eggs. In a mug in a microwave! One minute and you have a perfectly poached egg. We didn't have any English muffins on hand, so I made some crunch hashbrowns to serve as the base. These were delicious.

I used Ina Garten's blender method. Easy peasy.

I while back I learned a method from the cooking school I'm always taking classes at. You take all the ingredients and toss them in the pan together and whisk over low heat. Of course, your first reaction will be that there is no way that will come together. It works and is so easy to do.

Is there water in the mug? About half full? This I want to try instead of getting out my 4-cup poacher pan every time. :shock:
