A very good friend gave me a huge basket of mixed greens freshly picked from his garden. My basil begged to be included in the salad. So 2 cups of basil leaves became the base for the dressing. Sweet Harold was very happy with dinner tonight.

Made this one on the fly, but it was oh so good.

2 cups packed basil leaves
1/2 cup olive oil
3 T fresh lemon juice
1 1/2 T. white wine vinegar
3 garlic cloves, crushed
1/4 t. red pepper flakes
Kosher salt and freshly ground black pepper to taste


Pulse all ingredients in food processor until well blended. Taste and add additional salt and pepper if needed.

This salad is delicious! I made it yesterday with red bell pepper instead of the tomato knowing I'd have it for at least another day or two and wanting to leave room for variation. I also added kalamata olives and a garlic vinaigrette. YUM!!! Thank you for sharing.
