Well, the pea soup dinner is deemed to have been a success! The only recipe change needed was that 1-1/2 hours simmer was a little short. I added an extra half hour and improved the texture greatly IMHO.

Seasoning was perfect (1 tsp salt), as the ham was not particularly salty and didn't over salt. Other seasoning included a little ground pepper, a pinch of thyme, two bay leaves, and a dash of liquid smoke.

That's the one. Our only change - wife suggested the addition of "1 diced potato" for a smooth creamy texture. It's cooking now. Ninety minutes to ETFD (estimated time for dinner).

Quick aside question: If a recipe calls for "1 tsp salt", and all you have is "sea salt",
do you make any adjustment to the quantity?

Frankly, I never follow amounts supplied for salt (& I use sea salt).
I salt to taste (or feel if it's raw & I can't taste it).
Especially if it contains something salty like a hambone.
