 Post subject: Favorite Leftover Turkey Meals?

For me it's a toss-up between a nearly complete rerun and a loaded sandwich.

The rerun would have the main features: turkey, mashed potatoes (or rice), gravy, dressing (or stuffing, if it was stuffed and cooked inside the bird), and cranberry sauce, maybe with an optional vegetibble.

The sandwich would be on toast for structural support, with lots of Blue Plate mynez on both sides, with turkey, dressing, and cranberry sauce.

Oh! I forgot to remember gumbo! Yesterday evening I picked most of the meat off the bones, saved the meat in a plastic container, and berled the bones for a couple hours. Then I put the whole pot, covered, on a dish towel in the fridge overnight. This morning I really picked the meat out (then back in the stock), tossed the bones and skin and fat, and put the meaty stock on to berl and reduce. The house smelled pretty good yesterday, but my oven was not quite clean, so today the aroma will be mo better. And it will stimulate my appetite for more turkey. Tomorrow when I leave for work I will clean the oven.

By leftover I assume you mean the following day...
Well our next day meal is corned beef and cabbage!!!

Nooooo grasshopper..
CB&C is not on our turkey day menu'
But it is on the menu the day after Thanksgiving
at the FAIR GROUNDS on Gentilly Blvd.

Every since the kids left the nest,
my lovely lady and I make reservation in the clubhouse,
on the Friday after Thanksgiving...Black Friday is not our cup of tea.

Got any tips, (on the ponies, not the food) :D

Turkey hash and grits-- next or any day. Bits and pieces -- which are all that likely are leftover -- mixed with diced potatoes make for scrumptious turkey cakes. Carcass? Chop and save (don't forget to sieve out the bones) the broth makes for excellent surf and turf gumbo!...The stuff'll be gobbled down!

Dressing and Gravy.

I could eat great dressing with great gravy 'til the cows (turkeys) come home.

I'm with Charlie.......

A complete re-run of the Thanksgiving feast or a turkey sandwich on white bread with loads of Hellmann's Mayo, sweet pickles, sliced thin and salt and pepper. Late in the day a slice of pumpkin chiffon pie and a fresh
cup of coffee. Sometime in there.......a college football game.

For me, it's Chawlie's rerun idea. I did make turkey tetrazinni with the leftovers one time. That was pretty good, but too much trouble!
