 Post subject: More Fru-Fru Mac & Cheese Articles, and Some Push-Back

What is it about mac and cheese? It was never a mandatory or traditional Thanksgiving side dish in our house, and not really all that common. My Cajun father was a rice and gravy kind of guy (or rice and beans, or rice and gumbo), while my mother (from Colorado) grew up eating potatoes. As a result, macaroni and cheese was just an occasional side dish in our house when I was growing up, I suspect when our mother wanted something quick and easy, spelled K-R-A-F-T. We were never part of the New Orleans tradition of mac and cheese from scratch, creamy and oven-baked.

But apparently we missed out on a tradition that's observed in New Orleans and in much of the rest of the South. Now every food columnist seems to feel the need to publish new and exciting recipes for mac and cheese, although one article describes a strong reaction against adulterating the old standard.

Here is an article from popsugar. Yesterday I posted a link to one of their articles, and somebody said there was a malware warning about the website. So I will post the link to the yahoo article that leads to the popsugar article. Yesterday when I clicked on the link in yahoo to go to the main article, the page that came up did not have all the usual graphics, just a bunch of text, maybe because of the company firewall. So swim at your own risk, no lifeguard on duty.
