Everything looks wonderful. I was going to create something tonight with eggplant (from a friend's garden) and spinach noodles....but I put it off til tomorrow....that will give me another day to work on my creation.
So for dinner, another bowl of Hungarian Mushroom Soup. I love love love mushrooms and this soup is yummy!

Tonight it was "what can I cook without going to the grocery?" It was way too hot here to go out! I had a couple of chicken breasts, an avocado, some prosciutto, fresh figs, and tomatoes from the garden. So I wrapped some figs in prosciutto (kinda like melon in prosciutto -- delicious), fixed a tomato salad, coated the chicken with breadcrumbs and pan-fried it in a little butter and olive oil, and tried out something I've been wanting to try -- stuffed baked avocados. I had that at a restaurant in Starkville when I took my daughter to college orientation, and it was really good. I had never thought of cooking avocados! Couldn't remember exactly how it was served, but basically the same thing you'd put in a stuffed baked potato -- so I chopped a cooked 2 slices of bacon, cut the avocado in half, topped it with bacon, a little cheddar, and put it in the oven to get hot and melt the cheese. Then a dollop of sour cream on top. I liked it -- Randy thought it was messy. Maybe next time I would remove the avocado from the shell, cube it, mix with the bacon and cheese, and put back in the shells.

I never heard of cooked avocado and I'm intrigued. How was it "messy"? Did it "melt"? Did the flavor change?

No, it didn't melt, and the flavor didn't change. I thought it was delicious. My hubby thought it was messy to eat, because he had to scoop the avocado out of the shell. I seem to remember that the restaurant served it with a soup spoon or tablespoon to scoop it out with. I think it would work, though, to dice the avocado, mix it up with the bacon and cheese, and put it back into the shell. If I had had any green onions, that would have been a good addition. However, I was trying to NOT go to the store.
When I go back to Starkville to move her into the dorm, I'm going to try to go back there and get it again. Research, you know.

I don't think there's such a thing as too many green onions.
Thanks for sharing the baked avocado idea. I think I would love it. And I'm right in step with your "trying NOT to go to the store". Some of my best efforts have been a result of using what's on-hand -- it's fun to think up what might be good.
