Our Aintee Sharon, a retired pro chef, and can still run strings around many cooks these days, works masterly with pasta. For true, I learned from her that the water left over can be frozen and used in sauces for other pasta dishes, but also works well various gumbos. Never tried this, but she swears by the addition in marinara mixes. Slurp!

Another stock base to save! Ya hang around here enough, ya loin something almost every day. Foist it was shrimp heads and shells stock fa seafood gumbo. Den it was whey afta Greekifying yoghurt da whey Jim Z does. Now we sposta save sketty water. Okay, ahmina hafta give it a try nex time.

But my sketty water ain't got no salt. Ain't got no pork fat (sigh). Ain't got no olive erl. Dey say if ya put olive erl in da pot to keep ya pasta from berling over, da pasta absorbs olive erl instedda ya red gravy like it should when you combine 'em. So my sketty water is gonna be just pasta residue, widdout no emulsified erls. I will hafta see if it's woith saving.

And I ain't about ta buy no special tools fa dat. Ahmina just put a big pot under da colander in da zinc. Den ahmina berl dat sketty water way down so it won't take up so much rum in da freezer. And when I got maybe three different konna stock in da freezer, ahmina hafta put labels.

Tee, chawlie. And you gave me another anuther thang to remember: buy us some labels for freezer bags. But heah's mea culpa: In dat header up dere, I went and wrote "filling." Well its not folling that I meant to write "Fooling."... :oops: Seems I sometimes can't type-rIte. :)
