This recipe is from Chef Jonathan Wu of the Nom Wah Tu Restaurant, according to a yahoo article about the McDonalds brouhaha:

50g ginger, minced
50g scallion white, minced
50g garlic, minced
120ml maple syrup, grade A (preferably from New York State)
65ml sherry vinegar, Pedro Ximenez
60lm (sic) ketchup
45ml soy sauce
2 grams potato starch
2 grams ground Sichuan peppercorn
2 grams ground tianjin chilies
5 grams Sichuan peppercorn oil

Start off by mixing 20ml of the soy sauce with the potato starch to make the base in one pan.

Then in another pan, maple syrup, sherry vinegar, ketchup, and the rest of the soy sauce in a small saucepan. Simmer for 15 minutes. Add the potato starch and soy sauce mix from the previous pan and mix vigorously to avoid lumps. Simmer for an additional 2 minutes. Then add the ground Sichuan peppercorn, chili, and Sichuan peppercorn oil.

This recipe would be great for noodles. Now I have to translate the gm and ml to tsp and Tbs. Thanks.

Let's see...

1 pound = 16 ounces = 453 grams
1 ounce = 27 grams
50 grams = 1.85 ounce = 0.11 pound = 0.000052 tons
1 litre = 0.219 gallons Imp
1 liter = 0.26 gallons US = 1.057 quarts = 4.23 cups
120 ml = 0.031 gallons = 0.13 quarts = 0.51 cups, for Canadian maple syrup. NY isn't metric so I don't know how NY would convert.
2 grams = 0.071 ounce = 0.00442 pound

That should help you make your Szechuan sauce.

It might be easier to make if you made a bigger batch.
JUST MULTIPLY ALL THE CHEF'S AMOUNTS BY 100.

I have a little kitchen scale that's switchable between ounces and grams. I think it cost about $5 on sale at Amazon.

Or you could try Awt's way. :lol:
