Jim this is my take on pot roast:

Pressure Cooker Beef Pot Roast

Serves: 6

Ingredients:

• 1 3 pound beef roast (shoulder, chuck, rump or bottom round)
• - whole garlic clove (use as many as desired)
• 1½ teaspoons Creole Seasoning
• 2 Tablespoons olive oil
• 2 Tablespoons vegetable oil
• 2 cups onion, chopped
• 1 cup celery, chopped
• 3 cups water
• 1 envelope Lipton® Onion soup mix

Method:


1. Make small slits all over in the roast then stuff whole or half garlic cloves into each slit.
2. Generously coat the roast with Creole Seasoning
3. Heat oil in pressure cooker over medium heat.
4. Cook meat until brown on all sides, adding more oil, if necessary.
5. Remove the meat from the pressure cooker and set aside.
6. Sauté onion and celery in the same oil until translucent but not brown.
7. Add 3 cups of water.
8. Stir in 1 envelope Lipton® Onion soup mix.
9. Place the trivet in the pressure cooker.
10. Return the meat to the pressure cooker.
11. Lock lid in place and bring cooker up to high pressure; cook for 30 minutes.
12. Allow pressure to come down naturally, then carefully remove lid.
13. Transfer meat to a serving platter.
14. Serve with onion gravy over mashed potatoes.
