Gumbo, too! Pasta Bolognese or Pasta with Red Gravy and meatballs. (actually, I have red gravy and meatballs every day!)
Roast Pork Italian with Mac and Cheese
Grilled Chicken on Cool Pesto Penne with Ricotta Salata
Tenderloin of pork with walnut and sage with gnocchi
6oz burger with ham, cheddar and peach relish
Tomato and Bread Salad with fresh basil and warm garlic croutons

The canteloupes are from the Crescent City Farmer's market...seeded, diced and ground. Chilled with spices and basil, it's served with a twirl of rum spiked cream

The best single dish that I have ever eaten was a bowl of melon soup (cantaloupe soup) at L'Os a Moelle in Paris. The host guy brought everyone in the dining room a bowl with some little dried doohickies and herbs in them, then came back later with a large pot of the soup to put into each bowl. Between the time that he placed the bowls and came back with the pot of soup, he had to yell at everyone in the restaurant to not eat the things in the bowls. It was very funny. I have not dined there in a while, but that used to be one of my favorite restaurants in Paris. The staff are/were wonderful and the food was always wonderful.
