I have been making this for about 3yrs now, since I read about Greek yogurt and wondered what is was. Strained yogurt. Bought some and did not find much of a difference between that and regular yogurt. So I thought I would strain my own, and took it one step further. First line a medium size strainer with a clean light weight cloth.

Next add the carton of yogurt to the strainer over a small bowl.

Very important to fold up the four corners over the yogurt or you will have one mess in the refrigerator. Learned that the hard way. Refrigerate on the top shelf.

Next day you have collected this much whey. 1 3/4 cups. Do not throw away. Put up in 1cup zip lock lunch bags and freeze. Good for bread, soups, etc.

Big flavor change from start to end. Use the yogurt cheese in any thing that you would use cream cheese with a much better flavor. I have been using it on sandwiches and on crackers, and celery sticks, etc. Good stuff.

Lolly, I would be honored. I forgot to explain after the first day, on the 2nd day etc., fold up the four corners and twist the cloth to squeeze out more liquid. Then cup the cloth in your hand and squeeze the ball of yogurt. I am making some more now, maybe I better post a photo of that step, as pictures say more then words. Before you add to your blog make some Lolly. Tell me what you think. I always have a batch in the refrigerator. Make sure to store on the top shelf.

PS: I said any thing you would use cream cheese for, I meant to say any thing that you would use cream cheese for in appetizers.

I'll do that Lolly. Today was was day one of my new batch. I'll take some photos tomorrow or the next day. Lee try making some, and let me know what you think. Coach, I was a math and science major in college. Writing is a ordeal for me. Blogging would be tough.

Here you go Lolly. Grab all four corners of the cloth and give a firm downward shake to settle the yogurt in the bottom of the cloth.

With your other hand start twisting the cloth to squeeze out more whey.

I take both hands and cup that ball of yogurt and squeeze out more liquid. Then put back in refrigerator on the top shelf till tomorrow to repeat the process.
